اگر بخواهيم اين نوع زعفران را با بقيه انواع مانند سرگل مقايسه کنيم، اين محصول مقداري زردي به همراه دارد اما درصد بيشتري از اين محصول را کلاله قرمز رنگ تشکيل مي‌دهد و فقط درحدود ? الي ? ميلي‌متر، خامه دارد.

اگر دماي محيط گرمتر از حد معمول باشد مي توانيد براي حفظ کيفيت زعفران آن را در يخچال نگهداري نماييد، از جمله عواملي که در نگه داري زعفران بايد به آن توجه شود ميزان رطوبت محيط است، يعني اينکه بايد رطوب کم باشد.

در غير اين صورت زعفران رطوبت محيط را به خود جذب مي‌کند و باعث مي شود رنگ و بوي خوب خود را از دست بدهد.

روش هايي که استفاده مي شود براي افزايش ماندگاري زعفران است زيرا کيفيت زعفران مهمترين موضوع براي مصرف کننده است. شيوه هاي گوناگوني براي حفظ کيفيت زعفران و نگه داشتن آن در شرايط مناسب وجود دارد.

جهت نگهداري زعفران در انبار قفسه هايي از جنس فلز و يا پالت کار مورد استفاده قرار ميگيرد ، زيرا  اين قفسه ها از رسيدن رطوبت به زعفران ها جلوگيري مي‌کنند.

عامل ديگري که در نگهداري بهتر زعفران ها کمک مي کند روش خشک کردن و بسته‌بندي زعفران است. جهت حفظ کيفيت زعفران بايد به صورت استاندارد آن ها را خشک و بسته بندي کرد.

دماي مناسب محيط براي زعفران يکي از موارد مهم در اين زمينه است. بهترين دما براي زعفران خشک و بسته بندي شده 16 درجه سانتيگراد مي باشد.

عدم وجود رطوبت و نور در محيط نگهداري زعفران بسيار مهم است و بهترين شرايط نگهداري براي زعفران، محيطي تاريک و بدون رطوبت است.

زعفران ها بايد هر ماه يک بار از لحاظ شرايط نگه داري و کيفيت بررسي شوند.

نگهداري در منزل

شيوه نگهداري زعفران هرچند به مقدار کم در منزل مانند نگهداري در انبار است. براي نگه داشتن زعفران در شرايط مناسب بهتر است ابتدا آن را به صورت کامل خشک و آسياب کرده و در ظرفي که جريان هوا نداشته باشد قرار دهيد. 

بهتر است که زعفران هارا به صورت وکيوم شده درون يخچال قرار دهيد. توجه داشته باشيد که هيچگونه رطوبتي نبايد به زعفران ها برسد و همچنين دماي مکاني که زعفران ها در آن جا نگهداري مي‌شود نبايد بيش از حد گرم باشد زيرا باعث مي‌شود که زعفران ها خاصيت خود را از دست بدهند.
